Il settore ortofrutticolo, che nel 2002 ha raggiunto un fatturato di oltre 20 miliardi di euro, deve confrontarsi con un mercato dinamico e sempre più attento alle esi-genze legate alla sicurezza alimentare, alle caratteristi-che organolettiche e nutrizionali di prodotti destinati al consumo fresco.
Per rispondere a queste esigenze consentendo di con-seguire la tracciabilità dei prodotti, il mondo produttivo sta impegnandosi ad impiegare tecniche non distruttive di controllo e valutazione.
Partendo da questi presupposti la giornata di studio, vuole fare il punto sui più recenti sviluppi delle tecno-logie di selezione e analisi della qualità e coinvolge al-cuni fra i più importanti gruppi di ricerca attivi nel set-tore a livello internazionale. Il confronto permetterà di approfondire i principi fisici che stanno alla base delle tecniche non distruttive e di valutare le possibilità appli-cative, mostrando i più recenti risultati sperimentali e i più nuovi aggiornati modelli operativi al riguardo.

The fruit and horticultural sector achieved, in Italy in the year 2002, a global income of more than 2,000 bil-lion euro. Consequently it has to face dynamic markets paying more and more attention to the needs linked the food safety and quality problems of the various prod-ucts.
To answer to these requirements, strictly linked to the traceability of each product, the factories are engaged to use non destructive techniques for the control activ-ity.
Starting from these premises the meeting tryes to point out the more recent developments acquired in the technologies used for the selection and the analisys of the quality, involving some of the most important re-search groups working in the sector at international level. The comparison will permit to inquire the physi-cal principles that are at the basis of non-destructive techniques and to evaluate the improvements achieved on the possible applications from both the experimental results and the operational modelling points of view.
