Molecular aspects of olfaction and applications in agricolture

This Meeting is dedicated to biochemical aspects of olfactory perception and their potential applications in agriculture and food industry.
The biochemical study of odour perception, to which the Nobel laureate Linda Buck has provided a fundamental contribution with her discovery of olfactory receptors in 1991, presents interesting perspectives both in pure and applied science. The olfactory system, in fact, is becoming an ideal model for the study of the genesis and plasticity of central nervous system, also thanks to the peculiar regenerative capacity of olfactory neurons. Research has also found interesting applications for what concerns the use of pheromones in the control of insects’ populations in agriculture, as well as in the food industries for evaluating and improving the organoleptic properties of foods.

L’incontro è riservato alla presentazione di tematiche relative alla percezione olfattiva, con potenziali applicazioni nel settore agronomico e alimentare.
Lo studio della percezione degli odori, al quale il premio Nobel Linda Buck ha dato un contributo fondamentale con la scoperta dei recettori olfattivi nel 1991, presenta notevoli interessi sia nelle scienze di base che in quelle applicate. Infatti, il sistema olfattivo rappresenta sempre più un modello per lo studio del sistema nervoso centrale, anche grazie alla peculiare capacità di rigenerarsi dei neuroni olfattivi.
Da un punto di vista applicativo, le ricerche trovano interesse in agricoltura nel controllo di popolazioni di insetti mediante ferormoni e nelle industrie alimentari per quanto riguarda il controllo ed il miglioramento della qualità organolettica.
